Low Carb Copycat Zuppa Toscana Soup:


2 strips thick cut bacon, diced
1 lb sweet italian sausage links
1/2 an onion, diced
1 lb radishes, halved
8 cups bone broth or whatever broth you have
2 bay leaves
1 bunch kale, stems removed, & chopped
1 cup heavy whipping cream


In a dutch oven cook diced bacon over medium heat until crispy and remove and drain on paper towels. Cut your sausage into bite size peices and brown your sausage in the bacon grease and then add broth, onion, radishes, and bay leaves. Cook 40-45 minutes or until radishes are fork tender. Add kale and cook until the kale has cooked down, add the heavy cream and bacon and heat through. Remove the bay leaves and serve.

Serves 6 to 8 (Nutrition information is for 6 servings)
