Low Carb Zucchini Gratin:


2 medium zucchini sliced thin on a mandolin
1/2 cup parmesan cheese
salt and pepper to taste
drizzle of oilive oil


Place your sliced zucchini evenly into a baking dish, salt and pepper to taste, cover with parmesan cheese, and drizzle with olive oil. Bake at 350 degrees for 30 minutes or until zucchini is cooked through but not mushy. Broil for a couple minutes to brown the top.

Makes 4 servings. 3.12 total carbs per serving, 2.12 net carbs per serving.

Note: I have this mandolin and it works very well. I also have these gloves that I use with my mandolin so I don't cut a finger off! They are AWESOME!
