Crispy Low Carb Zucchini Fries:


1 medium zucchini, crinkle cut
1/2 cup egg whites
1/2 cup parmesan cheese (from the green can)
non stick spray
2 Tbs Low carb ketchup for dipping


Preheat oven to 425 degrees. Cut the zuccnini ends of and cut it in half and use a crinkle cutter to cut into fries. Dip the zucchini into the egg whites and roll in parmesan cheese and place on a baking sheet with a silicone matt or parchment paper. Spray the zucchini with non stick spray and bake for 15 minutes and remove from oven and carefully flip the fries. Put back in the oven for another 8 to 10 minutes and serve with low carb ketchup.

Note: I had left over egg whites and left over parmesan cheese but having the extra made it easier to coat them. So the actual nutrition count will be lower because you don't use all the eggs or cheese.
