Low Carb Zoodle Onion Bake:





         Ingredients:

Two medium zucchini, spiral cut
1/2 white onion, sliced thin on a mandolin
1/2 tsp dried thyme
2 Tbs unsalted butter
1/4 cup heavy whipping cream
1 egg, beaten
2 tsp coconut aminos or soy sauce
6 to 8 slices provolone cheese to cover the top
salt and pepper to taste
Non stick cooking spray

Directions:

Preheat oven to 400 degrees. Spiral slice your zucchini and thin slice onion on a mandolin and mix them up and put into a baking dish sprayed with non stick spray and season with salt and pepper.

In a microwave safe bowl melt butter and add thyme, heavy whipping cream, and coconut aminos and mix well. Beat in one egg and pour over zoodles and onions evenly. Top with provolone cheese slices and bake for 30 to 35 minutes. Let cook for 5 minutes before serving.

*Note: Serves 6

This is the spiral slicer I use and the mandolin. Both are great. If you pick up a mandolin I highly recomend these cut proof gloves!
