Low Carb Waffles:



non stick cooking spray
2 Tbs coconut flour
1 tsp baking powder
2 pinches of cinnamon
2 Tbs ricotta cheese
2 Eggs
2 droppers liquid stevia (or prefered sweetener of choice)
2 Tbs unsweetened cashew milk (or unsweetened almond milk)


Heat up your waffle iron according to instructions. Add all dry ingredients and mix well so there are no lumps. Add wet ingredients and mix well. Spray your waffle iron with non stick spray and pour batter into hot waffle iron and wait until cooked. Remove from waffle iron carefully, top with butter and walden farms pancake syrup and serve.

Makes 2 waffles. Serves 1.
