12 oz bag frozen cauliflower
1/2 a small onion, grated
1/2 cup Parmesan cheese (I used the kind out of the green can for this recipe)
1/2 tsp sea salt
Optional: Serve with low carb ketchup such as Heinz Reduced Sugar. (not included in nutritional counts)
Preheat oven to 375 degrees F. Cook your cauliflower in the microwave with 2 Tbs Water for 6 minutes. Drain well and run through the food processor with the shredding blade with your onion. Wait for cauliflower to cool slightly and mix in all ingredients. Use a Tbs measure to scoop into the palm of your hand and shape into tot shape and place on a silicone lined baking sheet sprayed very well with non stick spray. Bake 15 minutes, flip carefully and bake another 15 minutes and serve.
Makes 23 tots. Serves 4.
