Low Carb Smashed "Potatoes":




         Ingredients:

6 radishes, cleaned and tops & bottoms trimmed
2 Tbs Water
Salt
3 tsp cheddar cheese, shredded
6 tsp bacon crumbles, cooked

Directions:

Preheat oven to 350 dregrees.

Cook water and radishes in microwave for 6 minutes, remove and dry, smash with flat side of chef knife and place on a baking sheet and sprinkle with salt, top with cheese and bake at 350 for 5 minutes, top with bacon and serve.

Serves 1

*Note: If you do not have a microwave you can boil the radishes in water until fork tender.
