Low Carb Mock Shamrock Shake


1 cup ice
1 cup unsweetened cashew milk or almond milk
1/4 cup heavy whipping cream
1/2 tsp liquid stevia
1/4 tsp peppermint extract or more to taste
*Optional to make it green: 2 to 3 drops green food color


Pour all ingredients into a high powered blender and run until smooth. Pour into a glass and serve.

Serves 1. Less than 2.8 carbs per serving.

*Note: For a mint chocolate chip flavor use chocolate flavor liquid stevia
