Low Carb Scampi Marinade:


3 Tbs unsalted butter, melted
Zest of one large lemon
Juice of one large lemon
4 tsp minced garlic
cup red onion, diced
cup fresh flatleaf Italian parsley, chopped
1 tsp sea salt
20 grinds fresh black pepper
1/4 cup chicken broth
1 Tbs coconut vinegar


In a mason jar melt the butter in the microwave and add the lemon zest and juice, garlic, red onion, parsley, 1 tsp sea salt, 20 grinds fresh black pepper, chicken broth and vinegar. Shake to combine and put the chicken or shrimp and marinade into a zip lock bag and into a bowl and let marinate in the fridge for at least one hour before cooking.
