Low Carb Grab & Go Sausage, Egg, & Cheese Muffins:


8 Eggs
1/2 cup hard aged cheddar cheese, grated
1/2 lb mild sausage
4 mini peppers, diced
1/2 tsp sea salt
15 cracks black pepper


Preheat oven to 350 degrees. In a skillet brown you sausage and drain it and set aside to cool. Chop you peppers and combine everything except your sausage in a large bowl or use a large measuring cup that holds 4 cups and has a pour spout, this makes things easier! Mix everything together well and spray your muffin pan with non stick spray (if using a silcone muffin pan place on a baking sheet). Evenly distribute the cooked sausage into the cups and then pour the egg mixture evenly into each cup. Bake at 350 degrees for 17 minutes or until egg muffins are set.

Makes 12. a serving size is 2 muffins.
