1 head cauliflower, riced in the food processor
1/4 cup onion, diced
2 celery stalks, diced
2 red mini bell peppers, diced
1 yellow mini bell pepper, diced
1 orange mini bell pepper, diced
1/2 tsp salt
2 eggs, whisked
3 cooked pork chops, diced
1/2 cup Coconut aminos or soy sauce
Green onions for garnish
1 Tbs oil


heat oil in a large pot over medium heat and add the onion, celery, and bell peppers. Cook for 5 minutes and add in your riced cauliflower and 1/2 tsp salt. Continue to cook, stirring frequently, until your cauliflower is cooked and softened to rice consistency. Push all the mixture to one side of the pot and add your eggs. Let this sit for a minute and then stir the side with the eggs to break it up and cook through before you stir it all together. Add the diced pork and stir well to combine. Add the coconut aminos and stir VERY well and serve as a main dish or as a side.

*Note: As a main dish I'd say about 6 to 8 servings. As a side dish I am sure you would get many more servings. I'd say about 12 depending on size and what you serve with it.

Would be great served with Sweet and Sour Chicken, General Tso Chicken, or Chinese Beef!
