Low Carb Piņa Colada:




         Ingredients:

2 oz rum
1 Sugar Free Pineapple Crush Singles to Go Drink Mix packet (They sell a box of these for $1 at my local grocery, at Walmart, & the Dollar Store)
2 cups ice
1 cup unsweetened cashew milk (or almond milk but nutrition stats below are based on cashew milk)
1/4 tsp coconut extract

Directions:

Combine all ingredients in a high powered blender and blend until smooth. Pour into a margarita glass and serve.

Serves 1

*Note: For a family/kid friendly version leave the rum out.

I use this blender and it is amazing. I served in these hurricane glasses but the pitcher set is great if you want to make a big batch for a crowd. 1 serving fills two of the smaller glasses that come with the pitcher set:
