Low Carb Nacho Egg Muffins:



         Ingredients:

6 egg whites or 4 to 5 eggs, beaten
1 tsp homemade taco seasoning
6 Tbs cheddar cheese, shredded
12 pickled Jalapeņo slices
6 tsp cheddar cheese, shredded
3 tsp bacon crumbles
Non stick spray

Directions:

Preheat the oven to 350° F. Spray 6 sections of a 12 cup muffin pan well with non stick spray. Whisk the taco seasoning into the egg whites. Spoon evenly into 6 sections of the muffin pan. Bake at 350 for 7 min. Remove from the oven and top each with 1 Tbs of cheddar cheese, 3 jalapeņos slices, a tiny sprinkle of more cheese, and a 1/2 tsp of bacon bits. Bake another 5 minutes and let cool for a minute or two before removing from pan and serve hot or store in the fridge to take for grab and go breakfasts.

Makes 6, Serves 2.
