Low Carb Mini Stuffed Pepper Nachos:


6 mini peppers
cup cooked sausage crumbles
1 wedge Laughing Cow Queso Fresco Chipolte Cheese (at room temp)
2 green onion diced
cup salsa
cup 4 cheese Mexican blend shredded cheese
1 Tbs homemade taco seasoning
6 additional tsp 4 cheese Mexican blend cheese for topping

Optional: Top with sour cream, more green onions, and bacon crumbles


Preheat your oven to 350 degrees. Cut your peppers in half lengthwise and lay open side up in a baking dish. In a bowl mix the sausage, laughing cow queso fresco chipotle cheese, diced green onions, 4 cheese Mexican blend cheese, homemade taco seasoning, and together. Then top with a bit more of the 4 cheese Mexican blend cheese. Bake in the over for 30 minutes or until the peppers are cooked, the filling it hot and the cheese on top is melty and crunchy.
