8 ounces chorizo sausage
2 tsp heavy cream
2 dashes Tabasco
2 dashes chipoltle tobasco
1/4 cup red onions, diced
1 cup shredded Colby jack cheese
Preheat oven to 350 degrees F. Combine all ingredients & Mix very well, breaking up all the chorizo. Spray cupcake pan with non stick spray. Pour evenly into the 12 sections. Bake at 350 degrees F for 15-17 minutes. Cool for a couple minutes & serve or cool completely & remove to bags for breakfasts on the go.
Makes 6 servings. Serving size is 2 frittatas.
