Low Carb Mexican Style Omelet:





         Ingredients:

Non stick spray
3 eggs
sea salt and freshly cracked black pepper to taste
1/2 cup cooked sausage crumbles
1/2 cup diced cheese, I used pepper jack, cheddar, and dubliner.
8 to 10 pickled jalapenoes
2 Tbs fresh cilantro, chopped

Instructons:

Heat 12 inch non stick skillet over medium low heat and spray with non stick spray. Beat the eggs and season with seas salt and pepper. Pour into the skillet and cover with a lid and cook until eggs are just set. Add the other ingredients to one side and fold over the other side, put the lid back on and turn the burner off and let sit until cheese is melted and everything is heated through and serve.

Optional: Garnish with a bit more cilantro, salsa, and/or a dollop of sour cream.

Serves 1 to 2.

This is the skillet I use and omelets slide right out every time, no sticking!
