Low Carb Mashed 'Potatoes' & Gravy:


12 Oz Frozen bag Green Giant Riced Veggies Cauliflower
1 Tbs beef broth

For the gravy:
2 oz cream cheese
1/2 cup beef broth
1/4 cup heavy cream
Sea salt and Freshly ground black pepper, to taste


Put the riced cauliflower bag into the microwave and cook for 8 minutes. Drain and add to a bowl with a Tbs of beef broth and sea salt and pepper to taste and cream with a stick blender until creamy and delicious.

In a saucepan combine the beef broth, heavy whipping cream, and cream cheese and heat over medium heat and stir until combined. Let cool slightly to thicken. Season with sea salt and freshly ground black pepper to taste and serve the gravy on top of the mashed 'potatoes'.

Serves 4.
