Low Carb Baked Macaroni and Cheese:





         Ingredients:

1 bag ziti miracle noodles
5 slices of Deluxe American Cheese
1/2 cup unsweetened cashew milk (or unsweetened almond milk)
2 Tbs salted butter
1/4 tsp garlic powder
1/4 tsp onion powder
2 eggs
2 Tbs parmesan cheese
Non stick spray

Directions:

Preheat over to 350 degrees. Drain and rinse your noodles. Place in a bowl and cover with mater and microwave for 3 minutes. Remove and drain and rinse again. Place noodles in papertowels and dry very well. Heat butter in a skillet on medium heat. Add the noodles and the garlic and onion powder and cook, stirring often, for about 5 minutes and set aside. Break up the cheese slices into a microwave safe dish and add the cashew milk. Microwave in 1 minute increments sirring inbetween until the cheese and milk become a sauce. Mix the cheese and noodles together and set to the side. Whisk two eggs together and very quickly stir into the cheese and noodle mixture until well combined. Spray two 8 ounce ramekins with non stick spray and place on a baking sheet. Pour the mixture evenly into the ramekins and top each with 1 Tbs of parmesan cheese and spray the top with non stick spray. Bake for 35 minutes and serve right away. They will fall some if you wait to serve but are still delicious.

Makes two individual servings. 4.25 total carbs per serving and 2.12 net carbs per serving.
