Low Carb Little Heart Frittatas:





         Ingredients:

1 roma tomato, diced
1 green onion, chopped
4 beaten eggs, beaten
half acup shredded cheese of your choice (I used thin shredded cheddar jack)
salt and pepper to taste
a dusting of Slap Ya Mama Original Spice Blend (optional)

Directions:

Mix everything together and pour into a heart shaped donut pan that's been sprayed with nonstick spray (or whatever pan you have) and bake for 15 minutes at 350 degrees. Run a butter knife around the edges and Remove from the pan. The pretty side isthe side that shows the veggies and what would normally be the bottom of thedonut. Top with sour cream in the center and an herb leaf (I had cilantro onhand so I used that) to serve.

Note: Very versatile, you could add whatever veggies or meats or seasonings you want and bake them up.

Makes 6 egg hearts. Three servings.
