Low Carb Green Bean Cheese Fries:


1 1/2 lbs fresh green beans, washed, drained, and ends trimmed
6 slices thick cut bacon
2 cups mozzarella cheese, shredded
2 cups cheddar cheese, shredded
salt and pepper

Dipping sauce:

1/2 cup Walden Farms 0 Carbs 0 Calorie Ranch Dressing
1/4 tsp garlic powder
1/4 tsp paprkia
1/8 tsp cayenne pepper


Mix the dipping sauce ingredients, cover, and let sit in the fridge for at least an hour (preferably over night).

Line a sheet pan with foil and put 6 slices thick cut bacon into a cold oven and set to 400 degrees. Bake until crisp and remove to paper towels, approximately 23 minutes. Toss the green beans in the bacon grease on the baking sheet and salt and pepper. Bake for 15 minutes and flip. Top with cheese and bake 5 to 6 minutes more or until cheese is melted. Remove to serving tray, top with bacon, and serve with dipping sauce.
