Low Carb Faux-Tato Salad:


1 (12 oz) bag frozen cauliflower
1/2 cup Mayonnaise
1/4 cup diced red onion
1 stalk celery diced
1 tsp red wine vinegar
Sea salt & Freshly cracked black pepper to taste
1 tsp fresh Italian Flatleaf parsley, chopped


Cook cauliflower according to package instructions, drain, and cool. Mix everything together, season with sea salt and fresh cracked pepper, and store in the fridge or serve immediately garnished with chopped parsley.

Serves 4.
