Low Carb Egg Drop Soup:


8 cups chicken bone broth or stock
4 eggs, beaten
1/4 cup chopped red onion
1 Tbs olive oil
2 tsp coconut aminos or soy sauce
1/2 tsp fresh grated ginger
salt and pepper to taste
garnish with chopped green onions


Saute onions in a little olive oil until transparent. Add everything except eggs and scallions and bring to a boil for one minute and then slowly pour in the beaten eggs while whisking briskly to form egg strands. Ladel into bowl, garnigh with green onions, and serve hot.

Serves 8.
