Low Carb Dirty Rice:




         Ingredients:

1/2 a medium to large head of cauliflower or one small head, riced in the food processor
1 large red bell pepper
1/4 cup diced red onion
1 stalk celery diced
1 smoked sausage, diced
2 Tbs salted butter
1/2 cup beef broth
salt & pepper to taste

Directions:

Heat butter over medium heat in a large skillet. Add red bell pepper, onion, celery, and diced smoked sausage and saute until veggies are translucent and sausage is cooked & browned. Add riced cauliflower and mix well, pour in the beef broth and keep stirring for 5 minutes or until cauliflower is cooked through. Season with salt and pepper to taste.

Serves 4. Total carbs 6 per serving, Net carbs 3.8 per servings.
