Low Carb Cheddar Jalapeņo Meatballs:


1 lb ground beef
1 lb pork sausage
4 oz can diced green chiles, drained
2 eggs
1 Tbs Shan's Rub
1/2 cup cheddar cheese

For serving:

Sprinkle with more cheddar cheese for serving
40 slices pickled jalapeņos


Preheat oven to 375. Mix together all the meatball ingredients. Scoop out using a medium cookie scoop. Makes about 40 meatballs. Scoop into meatballs, place on a baking sheet covered with tin foil (easy clean up), and bake for 15 minutes. Remove from oven and drain on a paper towel. Plate and top each meatball with a sprinkle of cheese and a jalapeno slice and microwave for a couple seconds until the cheese is melty and delicious.

Serves 10.
