Low Carb Cabbage Pepperoni Soup:


8 cups beef bone broth or beef stock
1/2 a large cabbage, cut into chunks
1/4 of a white onion, diced
3 celery stalks, diced
6 ounces pepperoni, diced
1 bay leaf
Salt and pepper to taste


Put everything into the pressure cooker and set to soup/stew for 10 minutes. Let cool slightly and serve.

*note: For an extra treat top soup bowl with one slice of provalone cheese before serving. It gets melty and delish!
