Butter Bacon Cod:


2 Tbs salted butter
1 lemon wedge
1 Tbs fresh oregano
1 Tsp fresh thyme
2 cod filets
2 slices of cooked bacon, chopped

Optional: garnish with a sprig of oregano and/or thyme


Heat butter in a skillet on medium high heat. When butter is melted squeeze the juice of one lemon wedge into the pan with the butter. Add fresh chopped herbs and lay the fish in the pan. Cook for 5 minutes and flip and cook another 5 minutes or until fish is cooked through. Remove to plates and spoon any butter and herbs left in the pan over the fish. Top with chopped bacon and garnish with fresh herbs.

Serves 2.
