Low Carb Biscuits & Sausage Gravy:



Biscuit Ingredients:

1/2 cup almond flour
2 Tbs Coconut flour
1/2 cup shredded cheddar cheese
1/2 tsp salt
1/2 tsp garlic powder
2 tsp baking powder
1 stick cold unsalted butter
2 eggs

Gravy Ingredients:

1 lb sausage cooked and drained
1 cup heavy whipping cream
Salt and pepper to taste

Directions:

Preheat oven to 400 degrees. Mix all the dry ingredients very well and break up any lumps. I added this and the cheese to the food processor and whirred it up. Then I cut up the butter into tablespoons and added to the food processor and pulsed until it formed into little balls and then I took it out and mixed in the egg and placed in the fridge while I worked on the gravy. Brown you sausage and drain it and add it back to the pan. Pour in the heavy cream and set it cook on medium low. Form your biscuits onto a sheet pan lined with a silicone baking mat and put in the oven for 15 minutes while your gravy thickens up. If it gets too thick, don't worry, you can add a bit of heavy cream at the end to thin it out. Let your biscuits cool for a minute and remove to a plate and serve the gravy over top.

Makes 6 biscuits with gravy. This is VERY filling so I would say 6 servings or 3 lumberjack size servings!
