Low Carb Bacon Wrapped Jalapeno Stuffed Shrimp:

         Ingredients:

12 Oz Jumbo Shrimp, butterflied
1/2 a large jalapeno, cut into match sticks
6 Slices of bacon, cut in half
non stick spray

Directions:

Preheat oven to 450°f. Stuff the jalapeno match sticks inside the shrimp and wrap in bacon and secure with a toothpick. Put on a baking sheet and spray with non stick spray. Bake in the oven for 15 minutes and then broil for 2 to 3 minutes to crisp up the bacon.

Serves 4. 3 bacon wrapped shrimp per serving.

*Note: Even better served with queso!
